Chicken Soup for Weight Loss

Mezzi Chicken Soup

Serving for six

1-can (14 ounces) of Swanson - fat free chicken broth
1.5 quarts of cold water
4-skinless, boneless chicken breasts
4-cloves of garlic (minced)
3-tablespoon salt
1.5 tablespoons of pepper
1-large white onion
1-pound of organic carrots (chopped 1/2 in size)
1cup of bok choy
1/4 cup of frozen peas
4-ounces of mezzi rigatoni

Boil the water with half of the garlic and 1 TBSP of salt in a stock-pot. Cut the chicken in one-inch cubes. Once the water comes to a boil, add the chicken to the pot. While the chicken is boiling, chop the other ingredients: carrots, bok choy and onion. Set aside. Thaw peas at room temperature.

After the chicken has boiled for 35 minutes, skim off any fat deposits from the pot. Add the rest of the garlic cloves and Swanson broth and other ingredients. In another pot, boil the pasta for 10 minutes, drain with cool water and add to the soup along with the peas.

Cook for another 30 minutes.
